A moist and tender family-style meatloaf packed with savory seasonings, onions, and eggs, baked to perfection and finished with a rich tomato-mustard brown sugar glaze. Yields two to three loaves, ideal for feeding a crowd or meal prep.

Ingredients

Directions

  1. Preheat the oven to 180°C.
  2. In a large mixing bowl, combine the ground beef, finely diced onion, diced bread slices, eggs, milk, mustard, ketchup, garlic salt, and onion powder.
  3. Mix the ingredients thoroughly by hand until well combined.
  4. Evenly divide and transfer the meat mixture into 2 or 3 greased oven-safe baking dishes, flattening the top of each loaf.
  5. Make a slight lengthwise channel down the center of each loaf to help maintain its shape while baking.
  6. Place the baking dishes into the oven and bake at 180°C for 1 hour.
  7. While the meatloaves are baking, dissolve the brown sugar cubes in a bowl with a tablespoon of hot water.
  8. Stir in the tomato soup, 1/4 cup ketchup, 1/4 cup mustard, and optional Frank's RedHot sauce to create a thick glaze.
  9. Remove the meatloaves from the oven after 1 hour and verify that the center is thoroughly cooked.
  10. Spread the glaze evenly over the top of each meatloaf.
  11. Return the loaves to the oven and bake for an additional 10 minutes until the glaze is set.
  12. Remove from the oven, let rest slightly, slice, and serve.
