English:
A hearty and flavorful Southern Indian (Tamil) style biryani made with tender boneless lamb or mutton and aromatic basmati rice. Featuring a balanced 2:3 rice-to-meat ratio and fragrant whole spices, this mild, crowd-pleasing dish tastes even better as the flavors settle after cooking.
Ingredients
Directions
English:
Rinse the basmati rice in cold water until it runs clear, then soak in water for at least 30 minutes.
Dice the tomatoes into small cubes, slice the onions into thin julienne strips, and grind the ginger and garlic together into a smooth paste.
Slit the green chili lengthwise down the middle while keeping it intact.
Heat 30 ml of neutral cooking oil in a large pot over medium heat and toast the whole whole spices (cardamom pods, bay leaves, cinnamon sticks, and cloves) for 30 seconds.
Add the sliced onions and sauté for about 3 minutes until softened.
Add the diced tomatoes, ginger paste, and garlic paste; sauté for another 3 minutes.
Add the boneless lamb or mutton, 2 cups (500 ml) of water, and 1 tbsp of salt.
Increase heat to high, then add the green chili, turmeric powder, chili powder, and an additional 2 tbsp of salt. Simmer the meat for 40 to 50 minutes until tender, topping up with water if needed.
Adjust the total liquid level to roughly 800g (a 1:2 ratio of rice to water, taking into account remaining pot liquid).
Bring to a boil, then add the soaked basmati rice, garam masala, and lemon juice (or vinegar).
Once about 80% of the visible water evaporates, reduce heat to the lowest setting. Taste and adjust salt or spice if needed.
Cover tightly with a lid and let it simmer on low heat for 10 minutes.
Remove from heat and allow to rest before serving warm with onion raitha and boiled eggs, garnished with fresh mint or cilantro.
