A hearty and versatile all-in-one breakfast skillet packed with crispy bacon-fried potatoes, scrambled eggs, melted cheese, and fresh herbs. Perfect for refueling first thing in the morning or as a satisfying meal any time of day.

Ingredients

Directions

  1. Chop the bacon into small pieces and fry in a skillet until crisp.
  2. Remove the bacon and set aside, reserving the rendered grease in the skillet.
  3. Dice the potatoes into small, uniform cubes.
  4. Add the cubed potatoes to the skillet with the bacon grease and fry over medium to medium-low heat for about 20 minutes, stirring occasionally.
  5. Season the potatoes with salt and paprika, toss well, and cook for another 10 minutes until tender and golden.
  6. Dice the onion (and optional bell pepper or mushrooms) and add to the skillet with the potatoes, cooking for about 5 minutes until softened.
  7. In a small bowl, beat the eggs and pour them evenly over the skillet mixture, scrambling continuously to combine.
  8. Add the chopped bacon back into the pan along with sliced Gouda cheese.
  9. Cook for another 2 to 3 minutes until the cheese is melted and the eggs are cooked through but still soft.
  10. Garnish with fresh chopped parsley and freshly ground black pepper before serving hot.
