Similar to an Italian frittata or Spanish tortilla, Tunisian tajine maadnous is a savory egg dish packed with spiced chicken, tender potatoes, melted cheese, and fresh parsley. Baked until golden brown and firm, this hearty dish is traditionally enjoyed warm or at room temperature, often served alongside harissa for an added spicy kick.
Ingredients
Directions
Mix Spices: In a small bowl, combine all the ground spices (cumin, coriander, turmeric, salt, paprika or cayenne pepper, black pepper, caraway, thyme, and cinnamon) and set aside.
Saute Onions: In a large frying pan or pot over medium heat, saute the chopped onion in 1 tbsp of olive oil until tender.
Brown Chicken: Toss the diced chicken breasts with half of the spice mixture. Add the chicken to the pan and cook until browned.
Simmer Potatoes: Add the peeled, diced potato and 1 cup of water to the pan. Bring to a gentle simmer and cook uncovered until the potatoes are tender and most of the liquid has evaporated.
Cool Mixture: Stir the finely chopped parsley into the cooked chicken and potato mixture, then set aside to cool.
Prep Pan and Oven: Preheat your oven to 180°C (350°F) and grease a medium (2 quart/liter) baking pan with the remaining olive oil.
Combine Ingredients: In a large bowl, whisk the eggs thoroughly, then stir in the cheese. Add the cooled chicken, potato, and parsley mixture along with the remaining spice mix. Stir until well combined, then pour into the oiled baking dish.
Bake and Serve: Bake for 30 to 35 minutes until completely set in the center. Allow to cool slightly, and serve warm or at room temperature, optionally accompanied by harissa.
