A vibrant and tangy condiment that adds a bright pop of flavor and crisp texture to tacos, sandwiches, salads, and grain bowls. Made by quick-pickling thinly sliced red onions in a hot brine of equal parts water and vinegar.

Ingredients

Directions

  1. Cut the red onions in half and slice them thinly from root to stem, then place the slices into a glass jar.
  2. In a small saucepan, combine equal parts water and vinegar along with a pinch of salt. Bring the brine to a boil over medium-high heat.
  3. As soon as the brine begins to boil, remove it from the heat and carefully pour it over the sliced onions in the jar, ensuring they are fully submerged.
  4. Allow the mixture to cool to room temperature.
  5. Add optional pickling spices or fresh herbs to the jar if desired.
  6. Seal the jar tightly with a lid and refrigerate for a few hours until the onions turn a vibrant pink color before serving.
