A classic, versatile 2-ingredient fruit jam recipe made with equal parts fresh fruit and sugar. Slow-simmered to extract maximum natural sweetness and flavor, perfect for preserving your favorite seasonal fruits in small batches.

Ingredients

Directions

  1. Wash, core or pit, and cut 1 kg of fresh fruit into small pieces, then place them into a heavy-bottomed pot.
  2. Place the pot over low heat on the stove, stirring frequently to prevent scorching.
  3. Once the fruit softens and releases its juices at the bottom of the pot, add 1 kg of sugar and stir continuously until fully dissolved.
  4. Maintain low heat and continue simmering for approximately 2 hours, stirring often (especially along the bottom) to keep the sugar from burning.
  5. If you prefer a smoother texture after simmering, blend the fruit pieces with an immersion blender.
  6. Carefully ladle the boiling-hot jam into sterilized glass jars, seal tightly immediately, and allow them to cool completely to form a vacuum seal before storing.
