A vibrant, authentic Italian liqueur made by steeping organic lemon peels in high-proof grain alcohol and combining the infusion with a sweet simple syrup. Bright, citrusy, and refreshing, it is best served ice-cold as a post-dinner digestif.

Ingredients

Directions

  1. Pour the alcohol into a 1 liter mason jar.
  2. Peel the lemons, carefully avoiding the white pith (it will make your limoncello bitter), and submerge the peels in the alcohol.
  3. Cover the jar and let the lemon peels infuse the alcohol for 20 days.
  4. After the infusion is complete, create a simple syrup by boiling the water and dissolving the sugar in it.
  5. Allow the syrup to cool completely, then strain the infused alcohol into the sugar water and stir.
  6. Bottle the mixture or store it back in the mason jar.
  7. Scale the recipe or adjust sugar to your preferred sweetness as desired; ensure ABV remains around 28-30%.
